Having worked in a Sichuan-focused restaurant for over 10 yrs, the white cardamom my boss used was a different shape and different flavor than any of the green cardamom I've purchased anywhere. (I'm a craft bartender and also a tea-blender for a few area coffee shops.) Our restaurant was the only place I'd ever even seen white cardamom before. Perhaps white cardamom is rare and unscrupulous people bleach green to sell as a knockoff? sc'Que?https://www.blogger.com/profile/10265490044916599157noreply@blogger.comtag:blogger.com,1999:blog-3940010684303946553.post-29276446927108007892021-01-24T11:31:28.301-05:002021-01-24T11:31:28.301-05:00Green cardamom.
White cardamom is just bleached ...Green cardamom.

White cardamom is just bleached green cardamom which is an unnecessary step in bitters making (more important in baking). Black cardamom is a different flavor (and when it is used with green, it is used as a lesser component as an accent).CocktailVirginhttps://www.blogger.com/profile/11761444989148498418noreply@blogger.comtag:blogger.com,1999:blog-3940010684303946553.post-69852827986721759342021-01-24T03:30:53.642-05:002021-01-24T03:30:53.642-05:00Just curious which Cardamom you used: green, black...Just curious which Cardamom you used: green, black, white... or a blend? sc'Que?https://www.blogger.com/profile/10265490044916599157noreply@blogger.comtag:blogger.com,1999:blog-3940010684303946553.post-83150738589804568002009-09-29T02:27:44.854-04:002009-09-29T02:27:44.854-04:00Thanks for the recipe, I'm on a mission right ...Thanks for the recipe, I'm on a mission right now to make Boker's bitters.http://www.qmixalot.blogspot.com/noreply@blogger.com
