3/4 oz St. Germain
3/4 oz Lime Juice
1 dash Angostura Bitters

There is a lot of foam on that drink. Was there any egg white?
No egg white and I'm not fully sure, although it could be due to the fact that he used Angelique (infused tequila) since they have a cordial license at Estragon (strange Boston liquor license laws). Angelique has some pineapple in it apparently. Otherwise, the lime, Galliano, and St.G shouldn't foam up like that. He may have designed the drink with regular tequila (or with regular tequila in mind) but has to deal with his restaurant's bottle limitations.
